I made this comfort food meal in about 30 minutes! Make it even faster if you keep browned ground beef on hand. You can leave out the mushrooms or use canned! Also, use any kind of broth or even water. Peas might be a good addition as well, but my family likes their veggies on the side. Serve alongside a salad and you have a complete meal! Keep in mind, you will need quite a large skillet for this since we are cooking the noodles in with the meat.
Skillet Beef Stroganoff
1- 1 lb package of ground beef
1- container of fresh mushrooms of your choice, chopped or slice to your liking any size will do, depends on how much you like mushrooms.
3 cups of beef, chicken, veggie broth or even water
1 cup sour cream (I use Daisy Original)
8 oz dry pasta shells (I used Live G Free from Aldi but regular noodles will work. Any shape except spaghetti would do well with this. You could even use egg noodles)
Brown ground beef in a very large skillet or good sized pot and drain. Add the beef back into the skillet and add chopped mushrooms and 3 cups of the broth/water. Mix the packet of dip mix with sour cream and put aside. Bring mixture to a boil and add in the uncooked noodles and stir around. Put the lid on the skillet or pot and let simmer on medium/low for about10 minutes, stirring occasionally, until the noodles are to your liking. Check to see if your noodles are done and add in the dip/sour cream mix and stir to combine. Simmer for about 5 more minutes on low. If you decide to add in peas or another veggie, I would do it at this point and cook the frozen veggie until done. I like to serve this type of meal in shallow bowls!
